Slightly healthy breakfast to start off the week

Spanish sardines, scrambled egg, quinoa with turmeric, sprinkled with cayenne pepper.

I only learned about Quinoa (keen-wah) this holiday season. Bought the seeds & tried it out. It really tastes like rice, but the look & texture will take a bit of getting used to. Here are some health benefits I read from bodyecology.com:

1. Complete protein: it has 9 essential amino acids that are required by the body as building blocks for muscles.

2. It has Magnesium, which promotes normal blood pressure & regulates blood sugar levels, supports healthy immune system & keeps bones strong.

3. High in Fiber, which helps clean colon

4. Good source of Manganese & copper that act as antioxidants to get rid of dangerous cancer & disease-causing substances.

Also, in its whole grain form, may be effective in preventing & treating artherosclerosis, breast cancer & diabetes.

After reading this, I’m kinda drawn to it. Looks like I’m gonna be eating more of quinoa this year!

Healthy Almond & Flaxseed Muffins

Made with whole wheat flour, flaxseed meal, almonds, muscovado sugar, canola oil, egg, almond extract, low fat milk!

Serve it with a drizzle of raw honey.

Yummeh!

Recipe: (I modified a muffin recipe i found in the internet)

2 Cups Whole Wheat Flour

3 Tsp Baking Soda

1/2 Cup Muscovado Sugar

1/2 Tsp Cinnamon

1/2 Cup Flaxseed Meal

1 Egg, beaten

3/4 cup lowfat or skim milk

1/2 cup canola or olive oil

1 tsp almond extract

chopped almonds to place on top of the muffins

raw honey to drizzle when served.

It’s pretty easy to make 🙂 Preheat oven at 350C.  Just mix all dry ingredients on a bowl, and on a separate bowl, mix beaten egg, oil, almond extract and milk. then pour and mix with the dry  ingredients until you make a sticky batter. place in muffin pan, and place almonds on top of the batter. Bake for 10-15mins.

 

drizzle raw honey before serving.

Today’s healthy attempt

After weeks of eating crappy food, today I try again to be a little healthy!

Basil omelette & garlic broccoli for late lunch
green tea & healthy fruit salad that consist of pineapple, dragon fruit, grapes, blueberries, walnuts & raw honey.

All-Good (early) Weekend

Finally I’m back to exercising! I think! Thursday, I went with my friend lee to ultra, but I felt so unfit, so we walked and chatted the whole time! And today, my friend meg coerced me to hit the gym to do cardio. I still felt like a sissy so I only did a few minutes biking & walked on the treadmill for an hour. I hope I get my energy back soon, it’s just that I ate too much junk this whole month, with all the instant meet ups, buffet, weddings, vacations etc. hopefully in the coming weeks I lose all the weight i gained. I might need to set a day just to detox!

But this weekend was a blast, definitely one for the books (or blog!) it started a bit early with my brother asking us if we wanted to go to Yakimix for lunch last friday. And boy, we sure pigged out! Then we tried this new coffee place in marikina called Coffee Alley. Coffee was good, but a little pricey for the area.

Saturday came and our good friend & small groupmate Rio got married!!!! It was wonderful, and I never tire of hearing their love story cause it really sets the bar high for all of us singles. Pearl, Lanie & I also got the privilege to sing at the wedding, it it was quite an awesome experience to sing with these super gifted ladies! plus I got to catch up with most of our dgroup mates, and was blessed to hear that they are still fighting the good fight of faith.

And today, I got to listen to Pastor Sonny’s message in CCF Eastwood, about Loneliness. I learned that you can’t just brush off that feeling, and you really have to admit to God if you’re lonely, and it’s a fact of life. And when there are periods in your life that you experience it, you have to learn to listen to what God has to say, and see how He will reveal Himself at that certain point, and how we have to deal with it.

After service, I got to meet Meg to watch Breaking Dawn, which was SURPRISINGLY interesting, before we worked out.

All in all it was a tiring but fun filled week(end). It was also purposeful, and I learned something about God again.

Today’s Good: oatmeal & flaxseed with creamer, cinnamon & dried blueberries

I’m starting to get tired of eating my oats with coffee, good thing I saw former VJ Nadya’s oatmeal post in instagram, so I made my own version of it:

Today’s Good: Cinnamon oats with flaxseed & blueberries

2 tbsp rolled oats
1 heaping tsp flaxseed meal
1.5 cups water
2 packets nonfat creamer (this is the only milk type we have at home today, but u could use a healthier one, like almond milk or soy)
1 tsp ground cinnamon
1 tsp muscovado
1 tablespoonful of dried blueberries

So what’s good about flax seed? Here’s what I read in about.com:

Feeling guilty today cos I ate so much otap & nacho chips. Oops. Should really start being strict with all the junk I put in my body! plus, I should start working out again. Sigh.

Fish fillet with Garlic & Oyster Sauce

This isn’t ALL good, but it tastes great! My first fish fillet with garlic & oyster sauce 🙂 got sick of making lemon dory so I decided to make this. A little sinful cos of the oil, but it’s delish. Haha! Too bad we ran out of broccoli… Would’ve been good with it!
